I have confirmed that those lines work nicely (I removed my
~/.emacs and ~/.mew.el, and added those lines to my ~/.emacs, and
ran Emacs 21.3 and Mew).

When I type `C lst RET' ([Shift]+[C] [L][S][T] [Enter]), the mode
line displays `Summary lst'.  And then, when I type `w', Draft is
created with `From: Charles Muller <cmuller-lst at example.com>'.

When I type `M-: (mew-user "lst") RET', the echo area displays
"cmuller-lst".  When I type `M-: (mew-user "default") RET', the
echo area displays "acmuller".

Your ~/.emacs or ~/.mew.el might have a conflict.
